What each ingredient does

Sugar
Sweetens the drink and, rubbed on the lemon rind, lifts out its aromatic oils.
Lemon juice
Adds acidity that balances the sweetness and sharpens the flavour.
Sherry
Adds body and a rich, fortified wine flavour to the drink.
Cider
Contributes fruity flavour and dilutes the strong sherry.

The step that matters

Rubbing the sugar on the lemon rind. Sugar pressed against the rind draws out the fragrant oils held in the peel. Rubbing too lightly gives little aroma, and the sugar must dissolve fully so the drink tastes evenly sweet.

Swap the borage

The recipe marks borage as optional. How well each one fits the dish's main ingredients (sugar, lemon, cider, sherry, nutmeg):

  1. Cinnamonfits better
  2. Allspicefits about as well
  3. Thymefits about as well
  4. Boragethe original

Fit is the average pairing score against sugar, lemon, cider, sherry, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
