What each ingredient does
- Coffee
- Supplies the flavor and color, as its soluble compounds dissolve into the hot water.
- Water
- Acts as the solvent that draws flavor out of the coffee grounds.
The step that matters
Let it sit without simmering. The grounds need to settle to the bottom. A rolling boil keeps them suspended, which can make the cup muddy and more bitter.
