Why it works: Allspice and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Brown Gravy

Ingredients

Directions

Prepare the beef and onions

  1. Cut the lean beef into thin slices.

  2. Fry the beef in a frying pan with a little butter and flour until nicely browned, being careful not to burn it.

  3. Fry the onions until golden.

Stew

  1. Place the beef and onions in a stewpan with the sweet herbs, allspice, and black pepper.

  2. Cover the meat with boiling water and stew for two hours.

  3. Add a little catsup, browning, and coarse sea salt to taste.

Strain and serve

  1. Strain the gravy and set it aside for use, leaving the fat until ready to use.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the meat flavour and body that the gravy is built on.
Butter
Carries fat for frying, helping the beef and flour brown.
Flour
Coats the beef and browns, giving the gravy a base that thickens it.
Onions
Soften and turn sweet when fried, adding savoury depth to the gravy.

The step that matters

Browning the beef in the flour. Flour and meat proteins brown through the Maillard reaction, which builds colour and roasted flavour. Burnt flour turns bitter and cannot be fixed, so the beef must be watched closely while it browns.

Swap the allspice

How well each one fits the dish's main ingredients (beef, butter, flour, onion, pepper):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Allspicethe original

Fit is the average pairing score against beef, butter, flour, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
