To Roast a Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 400°F (200°C).

  2. Cut a space in the knuckle of the pork leg and fill it with the chopped onion, sage, salt, pepper, and bread crumbs.

  3. Score the skin of the pork with a sharp knife.

  4. Butter a piece of parchment paper and place it over the skin.

Roast and serve

  1. Roast the pork at a distance from the fire to prevent burning.

  2. Serve with apple sauce and a little gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork leg
Forms the main cut of meat, which cooks through slowly in the oven.
Onion
Adds moisture and savory aroma as it softens inside the leg.
Sage
Contributes a herbal aroma that flavors the meat from within.
Bread crumbs
Soak up meat juices and add a softer, stuffing-like texture inside the cut.

The step that matters

Roast at a distance from the fire. Direct, intense heat chars the outside before the thick centre of the leg cooks through. Keeping the leg farther from the heat source allows gentler, more even cooking and prevents burning.

Swap the apple

How well each one fits the dish's main ingredients (pork, onion, sage, pepper, bread, butter, sauce):

  1. Lemonfits better
  2. Avocadofits better
  3. Limefits about as well
  4. Applethe original
