Pigeon Pie

Ingredients

Directions

  1. Season the pigeons inside and out with salt, pepper, and mace. Place a bit of butter rolled in the seasoning inside each pigeon.

  2. Lay a seasoned beef steak at the bottom of a dish. Place the pigeons on top.

  3. Between every two pigeons, add a yolk from a hard-boiled egg. In the center, add the livers and gizzards.

  4. Pour in 1 cup of weak gravy or water. You can cut the pigeons in half if desired.

  5. Place the pigeons breast side down, then cover with a pie crust. Brush the crust with beaten egg and decorate the center with pastry leaves.

  6. Scald the feet of the pigeons before placing them in the pie.
