To Make a Quart of Raspberry Cream Ice

Ingredients

Directions

Make the base

  1. If using raspberry jam, pulp it through a fine sieve with a little milk to remove the seeds.

  2. If using fresh raspberries, add sugar to taste after pulping the fruit through a sieve.

Finish the mixture

  1. Add enough cream to fill the mold, plus a little extra for freezing.

  2. If the mixture is not a fine color, add a few drops of prepared cochineal.
