Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a bowl, rub the dripping into the flour.

  2. Add the currants, sugar, candy peel, nutmeg, and baking soda.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the cake together as it bakes.
Eggs
Bind the dough and help set the crumb during baking.
Baking soda
Reacts with the dough's acidity to produce gas that lifts the cake.
Good dripping
Adds fat that tenderises the crumb and carries flavour.
Sugar
Sweetens the cake and helps it brown during baking.

The step that matters

Adding the baking soda. Baking soda only lifts the cake when it reacts with an acid in the mixture and then bakes quickly. It should be evenly mixed in with the other dry ingredients so no pockets of soda remain, which would leave bitter patches and uneven rise.

Swap the currant

How well each one fits the dish's main ingredients (sugar, nutmeg, flour, egg, milk):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against sugar, nutmeg, flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
