To Pickle Mushrooms

Ingredients

Directions

  1. Clean the mushrooms by cutting off the dirty end of the stalk.

  2. Soak them in spring water and rub with a flannel dipped in salt.

  3. Place them in a well-tinned stewpan and sprinkle with a little salt.

  4. Cover and boil for 5-6 minutes until thoroughly hot and the liquid is drawn out.

  5. Remove from the liquid and lay between cloths to maintain color.

  6. Once cool, pack into glass bottles with mace and white peppercorns.

  7. Fill the bottles with white wine vinegar and seal tightly with corks and a bladder.
