Ingredients

Directions

Prepare the celery

  1. Cut the white part of the celery into small pieces.

  2. Stew the celery in white gravy or milk until tender.

  3. Pass the cooked celery through a sieve using a spoon.

Finish the sauce

  1. Add salt and white pepper to taste.

  2. If the sauce is not thick enough, mix butter and flour, then add to the sauce and bring to a boil.

  3. Stir in the cream to whiten the sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour and, once stewed and sieved, the body of the sauce.
Butter and flour
Form a roux-style mixture that thickens the sauce when it is brought to a boil.
Cream
Adds richness and softens the colour, whitening the sauce.

The step that matters

Bringing the thickened sauce to a boil. Flour needs to reach a boil to swell and lose its raw starchy taste, so the sauce thickens fully. Stopping early leaves it thin and floury.

Swap the white pepper

How well each one fits the dish's main ingredients (celery, milk, butter, flour, cream):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. White pepperthe original

Fit is the average pairing score against celery, milk, butter, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
