Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Grapes
Provide the sugar, acid and flavor that the wine is built from.
Sugar
Feeds the yeast during fermentation and adds sweetness that balances the wine's acidity.
Logwood chips
Extract color and tannin-like astringency into the liquid during the three-day steep.
Brandy
Raises the alcohol content of the finished wine and helps preserve it in the bottle.

The step that matters

Leaving the cask open until it stops hissing. Fermentation releases carbon dioxide, which builds pressure in a sealed vessel. Keeping the cask open lets gas escape while the wine is still actively working, so it does not burst or spoil before fermentation settles.

Swap the grape

How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Grapethe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
