Roasting Joint

Ingredients

Directions

  1. Regulate the fire strength based on the size of the meat. Use a brisk fire for small joints and a substantial fire for large ones.

  2. Do not add salt before roasting to prevent drawing out the gravy.

  3. For large beef pieces, cover with waiting paper and baste while roasting.

  4. When the meat is nearly done, remove the paper, baste again, and dredge with flour to create a frothy appearance.

  5. For veal, keep it at a distance from the fire initially, baste with butter, then move closer as it warms up, dredging with flour when nearly done.
