Beef Steak Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove the outer skin from the leeks and beat them with a rolling pin.

  2. Season the leeks with pepper and coarse sea salt to taste.

  3. Make a good pie crust and lay the leeks in it.

  4. Pour in enough water to fill the dish.

  5. Cover with the pie crust and bake in a 400°F (200°C) oven until well baked.
