What each ingredient does

Veal
Provides rich meat flavor and gelatin that gives the finished glaze body.
Egg whites and yolks
Coagulate during warming and trap fine particles, clarifying the stock to a clear liquid.
Onions
Add savory sweetness and aromatic depth to the stock as it simmers.

The step that matters

Reducing to a glaze. Boiling quickly concentrates the stock's gelatin and flavor. If it is not watched closely, the sugars and proteins in the concentrated liquid can scorch and turn bitter.
