Entree of Salmon

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Cut the fresh salmon into pieces and season with coarse sea salt and black pepper.

  3. Make white paper cases and place a little sweet oil at the bottom of each.

  4. Put the seasoned salmon pieces into the cases.

  5. Place the cases on a baking plate in the oven, covered with a stewpan.

  6. Broil until cooked through.

  7. Serve topped with poached eggs and anchovy sauce on the side.
