Leg of Lamb with Ovsters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the lamb

  1. Preheat the oven to 350°F (175°C).

  2. Fill the cavity of the boned leg of lamb with light forcemeat and pounded oysters.

  3. Sew the leg up and cover it with slices of lemon, bacon strips, and paper.

  4. Roast gently in the oven.

Make the sauce and serve

  1. When ready to serve, glaze the lamb.

  2. Prepare a sauce with blanched oysters, stewed mushrooms, boiled button onions, cullis, and oyster liquor.

  3. Season the sauce with cayenne pepper and lemon juice to taste.

What each ingredient does

Oysters
Give the stuffing and sauce a briny, savoury flavour that suits the lamb.
Light forcemeat
Fills the cavity with a soft, moist stuffing that stays tender while the lamb roasts.
Bacon
Lays fat over the lamb as it roasts, keeping the meat moist and adding savoury flavour.
Cullis (meat sauce)
Adds a rich, concentrated meat body to the sauce.
Lemon juice
Adds acidity that brightens the rich sauce.

The step that matters

Roast gently in the oven. Low, gentle heat cooks the thick lamb through without drying the outside before the centre is done. Stuffed joints need time for heat to reach the stuffing, so rushing risks an undercooked centre or a dry exterior.
