To Roast Larks

Ingredients

Directions

  1. Remove the entrails from the larks and wash them. Pat them dry.

  2. Skewer the larks on a spit, placing thin slices of fat bacon and sage leaves between each bird.

  3. While roasting, sprinkle bread crumbs over the larks or roast them plain.

  4. Once cooked, serve the larks with fried breadcrumbs around them and melted butter in a sauceboat.
