Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eels

  1. Skin and clean the eels, then cut them into 2‑inch pieces.

  2. Mix the eels with chopped parsley, eschalots, grated nutmeg, pepper, coarse sea salt, and lemon juice. Let it sit for 5 minutes.

Assemble and bake

  1. Place a layer of light forcemeat at the bottom of a deep dish.

  2. Arrange the marinated eels over the forcemeat.

  3. Cover the dish with puff pastry and bake at 400 °F (200 °C).

  4. Once baked, add some béchamel sauce or cullis to the pie.
