Legs and Wings of Fowls with Parsley

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the legs and wings off the fowl, including the meat from the breast.

  2. Bone the legs and stuff them with light forcemeat mixed with boiled parsley.

  3. Sew the legs up, dip them in the egg white, and roll them in breadcrumbs.

  4. Place each leg and wing in paper cases and bake at 400°F (200°C).

  5. Prepare a sauce by finely chopping mushrooms and lean ham, adding cullis and white wine, and reducing it to a glaze.

  6. Serve the fowl with the sauce and fried parsley on the side.
