Ingredients

Directions

Prepare

  1. In a pot, stew the trussed pullet with veal broth, mace, and onion slices until tender and the liquid is nearly reduced.

  2. Meanwhile, wash and boil the rice until half cooked, then strain it.

  3. Add butter, cayenne pepper, and salt to the rice, and simmer until fully cooked.

Serve

  1. Place the fowl in the center of a serving dish, top with rice, and pour béchamel sauce over the rice.

  2. Garnish with baked puff pastry leaves around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pullet
Provides the main meat, which becomes tender through slow stewing in liquid.
Veal broth
Moistens and flavors the bird as it stews and reduces into a savory liquid.
Rice
Forms the bed under the fowl, absorbing butter and seasoning as it simmers.
Fresh butter
Adds richness and a silky mouthfeel to the cooked rice.
Béchamel sauce
Adds creamy moisture and richness over the rice and fowl at serving.

The step that matters

Simmering the rice after half cooking. Rice that is cooked too long turns mushy, while rice left too firm stays grainy. Cooking it partly first, then finishing gently in butter, lets the grains absorb fat and seasoning while keeping their shape.

Swap the mace

How well each one fits the dish's main ingredients (veal, onion, rice, butter, pepper, sauce):

  1. Parsleyfits better
  2. Capersfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against veal, onion, rice, butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
