Ingredients

Directions

  1. Wash all vegetables thoroughly.

  2. Cut celery, turnips, carrots, onions, artichokes, cauliflower, broccoli, and asparagus as described.

  3. Boil each vegetable separately in enough water to cover them until tender.

  4. Strain the cooking liquid into one saucepan and place the vegetables in another.

  5. Add the strained liquid to the saucepan with ½ pint of strong consommé.

  6. Thicken the mixture with flour and water, then season with cayenne pepper, coarse sea salt, and lemon juice.

  7. Let it boil for 10 minutes, then strain it over the vegetables.

  8. Simmer the vegetables together.

  9. Serve in a raised pie crust or a deep dish with a raised crust baked around it, 2 inches high.
