What each ingredient does

Milk
Forms the creamy, rich base that the spirits and citrus are blended into.
Eggs
Proteins set as the punch heats, trapping fine solids that the jelly bag then removes for clarity.
Brandy
Adds alcohol and warm aroma, and helps keep the bottled punch stable.
Rum
Adds depth and a sweet, molasses-like aroma to the spirit blend.
Sugar
Adds sweetness that balances the acidity of the citrus and the richness of the milk.
Lemon juice
Adds acidity that brightens the rich, sweet mixture.

The step that matters

Heating the mixture with the eggs. Milk and egg proteins coagulate when heated, so bringing the mixture to a boil and simmering it sets the curds that straining must remove. Heating too hard on a brisk fire can scorch the milk and leave a burnt taste, so the heat needs control.

Swap the mace

How well each one fits the dish's main ingredients (milk, cinnamon, clove, lemon, orange, brandy, rum):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against milk, cinnamon, clove, lemon, orange, brandy, rum. Candidates are from the same food group and used in at least 100 recipes.
