To Preserve Bareerries
Ingredients
Directions
Make the syrup
Bruise the barberries and add them to the spring water in a pot.
Bring to a boil, then strain the liquid through a fine sieve.
Add the clarified sugar to the strained liquid and stir until dissolved.
Add more ripe barberries to the syrup and bring to a boil again.
Remove from heat and let sit overnight.
Pack and seal
The next day, take the barberries out of the syrup and place them in jars.
Boil the syrup until it thickens, then pour it over the barberries in the jars.
Seal the jars tightly.

What each ingredient does
- Barberries
- Provide the main fruit flavor and the tart edge that the sweet syrup balances.
- Clarified sugar
- Sweetens the syrup and helps preserve the fruit by drawing water out of it.
The step that matters
Boil the syrup until it thickens. Sugar syrup thickens as water evaporates and its concentration rises. Too little boiling leaves it thin and less protective, while overboiling can make it too stiff or cause it to crystallize once cool.
