Why it works: Ham and veal are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 3,264 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Sweetbreads with Veal and Ham
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Blanch heart sweetbreads for 8 minutes, then wash and dry them.
Make an incision in the underside and remove a piece; pound it with a small amount of light forcemeat.
Fill the cavity in the sweetbread with the forcemeat.
Rub the top with egg white, then layer with ham, veal, and bacon.
Cover with paper and a thin sheet of common paste.
Bake gently at 300°F (150°C) for 1 hour.
Before serving, remove the paste and paper, glaze the bacon, and serve with béchamel sauce underneath.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
