Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Skate or other fish
Gives the soup its main flavor and body as it simmers.
Egg
Its proteins set on heating and gather impurities so the soup clears when strained.
Vermicelli
Adds starch and body to the finished soup.
Anchovies
Adds savory depth to the broth.

The step that matters

Adding the beaten egg to clarify. The egg must be stirred in so it is distributed evenly before heating. As the egg proteins set, they trap cloudy particles, which strain out and leave a clearer soup. Adding it to a boiling soup or skipping the strain would leave it cloudy.

Swap the mace

How well each one fits the dish's main ingredients (veal, fish, turnip, onion, celery, egg):

  1. Capersfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against veal, fish, turnip, onion, celery, egg. Candidates are from the same food group and used in at least 100 recipes.
