What each ingredient does

Turnips
Provide the main body and flavor of the soup once simmered until tender.
Plain cleared gravy soup
Forms the liquid base of the soup that carries the turnips.

The step that matters

Fry the turnips until nicely colored. Frying browns the surface of the turnips through the Maillard reaction, adding roasted, savoury flavour to the finished soup. Drain them well first so excess oil does not dilute the broth.
