Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Soups, Broths, &C

Ingredients

Directions

  1. Sweat the onions and leeks in 3 quarts of water with lemon peel, mace, and black pepper until three-quarters cooked.

  2. Add enough water to cover the meat and boil until the goodness is extracted.

  3. Skim the broth and strain it into a large pan.

  4. The next day, carefully remove the fat and warm the broth over a fire.

  5. Clear the broth with the egg whites and yolks, then add a little color and strain through a tamis cloth.

  6. Boil quickly until reduced to a glaze, being careful not to let it burn.
