Piper, with Dutch Sauce

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Stuff the cleaned fish with forcemeat and sew it up.

  2. Brush the fish with egg yolk.

  3. Roll the fish in fine bread crumbs.

  4. Brush the fish again with oiled butter.

  5. Roll the fish in more bread crumbs.

  6. Bake the fish at 350°F (175°C) until golden brown.

  7. Serve with Dutch sauce or cullis, adding chopped capers if using cullis.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
