What each ingredient does

Breast of lamb
Forms the main body of the dish and becomes tender through slow simmering.
Egg
Binds the breadcrumb coating so it adheres to the lamb.
Breadcrumbs
Form a crisp, browned crust under the broiler.
Butter
Adds richness and fat that carries the flavour of the herbs and shallots.
Essence of anchovies
Adds a savoury, salty depth to the lamb.

The step that matters

Broil over a low flame until tender and nicely browned. Broiling with a coating of egg and breadcrumbs can scorch the outside before the centre is heated through. Keeping the flame low and the lamb already nearly cooked lets the crumb set and brown gently while the meat finishes cooking.

Swap the shallot
