Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Leg of Lamb with Oysters
Ingredients
Directions
Bone the leg of lamb and fill the cavity with light forcemeat and pounded blanched oysters.
Sew the leg up and cover it with slices of lemon, coarse sea salt, bacon, and paper.
Roast gently until cooked through.
Glaze the lamb before serving.
For the sauce, combine blanched oysters, stewed mushrooms, boiled button onions, cullis, and the liquid from blanching the oysters.
Season the sauce with Cayenne pepper and lemon juice.
