Why it works: Sorrel and flour match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 231 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Poached Eggs with Sorrel, or Endive
Ingredients
Directions
Prepare the toast
Cut the bread to cover the inside of a dish and fry it in boiling lard until light in color. Drain and keep warm.
Make the sorrel sauce
Combine the chopped sorrel, butter, cayenne pepper, and essence of ham in a stewpan. Simmer until done.
Thicken the sauce with flour and water. Boil for five minutes.
Poach and serve
Butter the toast. Poach the eggs. Drain the eggs.
Lay the poached eggs over the bread, pour the sorrel sauce around, and serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Poached eggs form the main body of the dish and set into a soft, tender centre.
- Sorrel
- Gives the sauce its sharp, lemony acidity and bright green colour.
- Flour
- Thickens the sauce by swelling with liquid as it boils, giving it body.
- Butter
- Adds richness and a smooth, silky mouthfeel to the sorrel sauce.
- Essence of ham
- Adds a savoury, meaty depth of flavour to the sorrel sauce.
The step that matters
Thicken the sauce with flour and water. Flour must be fully hydrated and boiled to cook out its raw starch taste and reach full thickening power. Stirring it in smoothly before boiling prevents lumps.
Swap the sorrel
How well each one fits the dish's main ingredients (bread, butter, pepper, ham, flour, egg):
- Parsleyfits better
- Nutmegfits better
- Capersfits about as well
