What each ingredient does

Sheep heart
Provides the main meaty body and savoury base of the filling.
Beef suet
Adds fat that keeps the filling moist and tender during long cooking.
French roll crumbs
Soaked in cream, they absorb liquid and help bind the filling softly.
Raisins
Add sweetness and chewy texture that balances the spices.
Egg yolks
Bind the mixture and help it set into a cohesive filling when cooked.
Flour
Adds body so the filling reaches a firm, sliceable consistency.

The step that matters

Tie the bag tightly. If the bag is not sealed well, water enters and the filling becomes waterlogged, while expanding filling can burst the casing. A firm, airtight tie keeps the filling intact and moist during the long boil.

Swap the mace

How well each one fits the dish's main ingredients (beef, cream, cinnamon, clove, nutmeg, wine, raisin):

  1. Allspicefits better
  2. Cardamomfits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against beef, cream, cinnamon, clove, nutmeg, wine, raisin. Candidates are from the same food group and used in at least 100 recipes.
