What each ingredient does

Fresh tarragon leaves
Provides the main aroma and flavour that the vinegar takes on during steeping.
Vinegar
Acts as the solvent that draws flavour out of the leaves and preserves the finished liquid.
Isinglass
Fining agent that binds suspended particles so they settle, leaving the vinegar clear.

The step that matters

Transfer to a clean jar and let it sit until clear. Fining needs time to work. Isinglass gathers suspended particles and drags them down, so rushing this step or disturbing the jar leaves the vinegar cloudy.
