Flat Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Blanch the chicken pieces and season with pepper and salt.

  2. In a deep dish, layer the light forcemeat, followed by some chicken, sweetbreads, mushrooms, truffles, and morells.

  3. Add the remaining chicken on top.

Assemble and bake

  1. Cover with puff pastry, brush with beaten egg, and decorate the top with pastry leaves.

  2. Bake at 400°F (200°C) until golden brown.

Serve

  1. Before serving, pour a good cullis into the pie.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the pie and provides the savoury meat filling.
Light forcemeat
Adds a soft, tender texture that binds the layers together.
Throat sweetbreads
Contribute a delicate, rich texture to the filling.
Puff pastry
Forms a crisp, flaky crust that browns in the oven.
Egg
Brushed on top to promote even browning and a glossy golden finish.

The step that matters

Bake until golden brown. The pastry needs enough oven heat to set and brown fully. Underbaking leaves a pale, doughy crust, while overbaking can dry the meat beneath it.
