Macaroons
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 350°F (175°C).
Prepare tin plates with wafer paper.
Make the batter
In a bowl, combine the pounded almonds, sifted sugar, and a little rose water.
Whisk the egg whites to a solid froth and fold them into the almond mixture.
Shape and bake
Drop the mixture onto the wafer paper in small sizes, about the size of a shilling.
Dust a little sugar over the top of each macaroon.
Bake until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Blanched jordan almonds
- Provide the main body and nutty flavour of the macaroons.
- Sifted sugar
- Adds sweetness and helps the mixture set and brown while baking.
- Egg whites
- Whisked to a froth, they give the batter structure and lift as it bakes.
The step that matters
Folding the whisked egg whites into the almond mixture. Folding gently keeps the air bubbles from the whipped whites intact. Overmixing deflates them, so the macaroons spread flat and bake up dense instead of light.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
