Frying Fish

Ingredients

Directions

  1. Clean and dry the fish with a cloth.

  2. Dust the fish with flour.

  3. Heat plenty of dripping or hog's lard in a frying pan until boiling.

  4. Fry the fish until golden brown, then drain on a dish or sieve.

  5. In the same pan, add claret and white wine to nearly cover the fish.

  6. Add an anchovy, salt, nutmeg, and ginger, then simmer until half the liquid is gone.

  7. Remove the fish and add butter rolled in flour and minced lemon to the pan.

  8. Simmer until the sauce thickens, then rub a hot dish with shallot.

  9. Place the fish in the dish, pour the sauce over it, and serve.
