Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat and savory flavour that the gravy is built on.
Flour
Coats the meat and thickens the liquid as the gravy stews.
Bread crust or crumbs
Helps thicken the gravy and give it body as it stews.

The step that matters

Skimming off the scum. Foam that rises as the liquid comes to a boil contains impurities that cloud the gravy and spoil its flavour, so it should be skimmed away.

Swap the allspice

How well each one fits the dish's main ingredients (beef, flour, onion, pepper, bread):

  1. Garlicfits better
  2. Turmericfits better
  3. Parsleyfits better
  4. Allspicethe original

Fit is the average pairing score against beef, flour, onion, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
