What each ingredient does

Mutton neck
Provides the meat and bones that flavour the broth as it simmers.
Scotch barley
Swells as it cooks, thickening the broth and giving it body.
Carrots
Add natural sweetness and soften into the broth during the long stew.
Turnips
Soften during stewing and add mild sweetness to the broth.
Onions
Release sugars and savoury aroma as they cook into the broth.

The step that matters

Skimming the broth. Foam and fat rise to the surface as the meat simmers. Removing them regularly keeps the broth clear and stops it tasting greasy.
