Raspberry Vinegar

Ingredients

Directions

Infuse

  1. Place raspberries in a bowl and pour white wine vinegar over them.

  2. The next day, strain the liquid over another pound of fresh raspberries.

  3. Repeat the straining process the following day without squeezing the fruit.

  4. Pass the liquid through a wet canvas to prevent waste.

Sweeten and bottle

  1. Combine the juice with 1 pound of sugar for every pint of juice in a stone jar.

  2. Stir until the sugar melts, then simmer in a water bath, skimming as needed.

  3. Once cooled, bottle the vinegar.

What each ingredient does

Fresh raspberries
Provide the flavor and aroma that the vinegar takes up during repeated steeping.
White wine vinegar
Extracts and carries the raspberry flavor and gives the sharp acidity of the finished vinegar.
Sugar
Balances the vinegar's acidity with sweetness and helps preserve the finished syrup.

The step that matters

Simmer in a water bath while skimming. Gentle heating dissolves the sugar fully and keeps the syrup from boiling hard, while skimming removes foam and scum that could spoil the flavor or keep the bottled vinegar from storing well.
