To Preserve Yeast
Ingredients
Directions
Whisk the yeast until thin.
Wash and dry a large wooden dish.
Apply a layer of yeast inside the dish with a soft brush and let it dry.
Repeat layering until you have a sufficient quantity, ensuring each coat dries thoroughly.
To use, cut a piece out and stir it in warm water.
For brewing, dip large handfuls of birch tied together in the yeast and let it dry.
