Why it works: Ginger and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

What each ingredient does
- Yeast
- Ferments the sugar into alcohol and carbon dioxide, driving the fermentation.
- White sugar
- Provides the fermentable sugar that yeast converts into alcohol, and sweetness.
- Raisins
- Add natural sugars and nutrients that feed the yeast during fermentation.
- Bruised ginger
- Contributes the spicy, aromatic flavour that defines the wine.
- Isinglass
- Fining agent that helps clear the wine by settling suspended particles.
- Lemon juice
- Adds acidity that brightens flavour and supports a balanced wine.
The step that matters
Cooling to blood warm before adding yeast. Yeast is killed by high heat. The liquid must be cooled to about body temperature so the yeast can start fermenting safely rather than dying in the hot syrup.
