What each ingredient does

Sirloin of beef
Forms the main body of the dish and provides the meat for both roast and filling.
Shallot
Adds a mild, aromatic flavour to the minced filling.
Bread crumbs
Form a golden crust on top of the filling when browned under a salamander.
Horseradish
Adds a sharp, pungent bite that contrasts with the rich beef.

The step that matters

Heating the minced meat with gravy. Enough gravy must moisten the mince without making it watery. Too little leaves it dry and crumbly, while too much makes the filling soggy and stops the bread crumbs from browning well.

Swap the horseradish
