What each ingredient does

Livers
Add richness and a soft, savoury texture to the stuffing ragout.
Streaked bacon
Adds fat and savoury flavour that bastes the meat as it cooks.
White wine
Adds acidity and aroma that lightens the rich cooking liquid.
Broth
Provides moisture and the base flavour for the stewing liquid and sauce.
Coulis
Thickens and sweetens the reduced sauce with concentrated fruit or vegetable flavour.

The step that matters

Reduce the liquid to a sauce, adding a spoonful of coulis.. Reducing concentrates flavour and thickens the liquid through evaporation. Skimming the fat first keeps the sauce clean and prevents it from tasting greasy.
