To Roast Pheasants

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bird

  1. Preheat your oven to 400°F (200°C).

  2. Pick the pheasant.

  3. Draw the pheasant.

  4. Cut a slit in the back of the neck.

  5. Remove the craw without cutting off the head.

  6. Wipe the inside of the bird with a clean cloth.

  7. Twist the legs close to the body.

  8. Leave the feet on.

  9. Cut off the toes.

  10. Truss the bird like a fowl for easier carving.

Roast

  1. Baste the pheasant with butter.

  2. Roast for 30 minutes for a young bird or 40-50 minutes for a full-grown bird.

Make the sauce and serve

  1. In a stew pan, combine the bread crumbs and enough milk to soak them.

  2. Add the onion and pepper.

  3. Bring to a boil.

  4. Simmer until thick.

  5. Stir in the cream or melted butter.

  6. Remove the onion and pepper.

  7. Pour the sauce over the roasted pheasant.

  8. Garnish with thin slices of lemon.

What each ingredient does

Pheasant
Forms the main meat of the dish, cooked by roasting until done.
Bread crumbs
Soaked in milk and simmered, they thicken the sauce to a smooth body.
Cream or melted butter
Stirred into the sauce at the end to add richness and a silky texture.
Butter
Basted over the bird so the skin stays moist and browns during roasting.

The step that matters

Roasting time for the bird's age. A young pheasant is ready after about 30 minutes, while a full-grown bird needs 40 to 50 minutes. Pheasant is lean, so overcooking dries the meat, and the age of the bird sets the timing.

Swap the onion

How well each one fits the dish's main ingredients (pheasant, butter, bread, milk, pepper, cream):

  1. Potatofits better
  2. Capsicumfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against pheasant, butter, bread, milk, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
