What each ingredient does

Ox heel
Releases gelatin and collagen into the broth, giving body and a rich mouthfeel.
Onions
Add sweetness and aromatic depth as they soften and release their flavour into the stock.
Carrots
Contribute natural sweetness and body to the broth as they cook down over the long simmer.
Butter
Adds fat for richness and a smooth, rounded mouthfeel to the finished soup.
Wine
Adds acidity and aromatic depth that brightens the long-cooked broth.

The step that matters

Skim off fat and scum regularly. Fat and foam rise to the surface during a long simmer. Removing them keeps the broth clear and stops it tasting greasy or muddy.
