Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Portable Soup, or Glaze
Ingredients
Directions
Prepare the bones
Ask the butcher to break the bones of a leg or shin of beef into smaller pieces.
Place the bones in a large soup pot and cover with cold water.
Make the stock
Heat gradually until it nearly boils, skimming off any scum that rises.
Add a little cold water to help remove remaining scum, then bring to a boil again and skim carefully.
Once the broth is clear, boil for 8 to 10 hours without adding roots, herbs, or salt.
Strain the broth through a fine sieve into a brown stone pan and let it cool quickly.
Remove the meat from the pot and let it drain in a sieve.
Reduce to a glaze
The next day, remove any fat from the top of the broth and pour it through a fine sieve into a thick copper stew-pan.
Add ¼ ounce of whole black pepper and boil briskly uncovered on high heat, skimming off any scum.
When it thickens and reduces to about a quart, transfer to a smaller stew-pan.
Set over low heat until it thickens to the consistency of very thick syrup, being careful not to burn it.
Test by taking a spoonful; if it sets into a strong jelly, it is done. If not, boil a little longer.

What each ingredient does
- Beef leg or shin bones
- Release gelatin and savoury flavour into the broth as they simmer for hours.
- Whole black pepper
- Adds aroma and a mild spiciness to the reduced glaze.
The step that matters
Skimming scum during the first boil. Scum is coagulated protein and impurities. Removing it while the broth heats keeps the stock clear and clean-tasting, and prevents bitterness and cloudiness in the finished glaze.
