Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ginger
Provides the characteristic spicy flavor and aroma of the drink.
Sugar
Provides sweetness and food for the yeast during fermentation.
Lemons
Add acidity and citrus aroma, with rinds contributing oils and flavor.
Isinglass
Acts as a fining agent that helps clear the finished drink.
Brandy
Adds alcohol and warmth of flavor to the finished drink.

The step that matters

Cool the mixture until warm like new milk. Adding the ferment-starting ingredients while the liquid is still hot could harm or kill the yeast. Cooling to lukewarm lets fermentation begin gently and evenly.

Swap the lemon

How well each one fits the dish's main ingredients (ginger, sugar, brandy):

  1. Apricotfits better
  2. Vanillafits better

  4. Lemonthe original

Fit is the average pairing score against ginger, sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
