Ingredients

Directions

Prepare the apricot ice

  1. Prepare rice custard ice as directed for pudding a la Cintra.

  2. Slice apricots and boil with sugar and water until dissolved.

  3. Pass the mixture through a sieve; if too thick, add thin syrup.

  4. Freeze the apricot mixture in the usual manner.

Assemble and serve

  1. Line a pudding mold with ½ inch of apricot-water ice.

  2. Fill the center with iced rice custard.

  3. Cover with the mold lid and immerse in rough ice until serving.

  4. Place on a dish, garnish with wafer gaufres filled with whipped cream, and serve immediately.

What each ingredient does

Apricots
Provide the fruit flavour and colour of the ice, and sugar-sweetened body once boiled and sieved.
Sugar
Sweetens the apricot mixture and lowers its freezing point so the ice stays soft.
Rice custard ice
Forms the creamy centre of the pudding, contrasting with the fruit ice around it.

The step that matters

Passing the apricot mixture through a sieve. Sieving removes skins and fibrous pulp so the ice freezes smooth; if the mixture is too thick, thinning it with syrup keeps the texture spoonable rather than hard and grainy.

Swap the apricot

How well each one fits the dish's main ingredients (rice, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Raisinfits better
  4. Apricotthe original

Fit is the average pairing score against rice, sugar. Candidates are from the same food group and used in at least 100 recipes.
