To Bake a Sucking Pig

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place the pig in a dish and coat it with flour.

  3. Rub butter all over the pig and place it in the oven.

  4. When it appears cooked, remove it and rub it with a buttered cloth.

  5. Return it to the oven until dry.

  6. Remove the pig, cut it up, and skim off the fat from the baking dish.

  7. Combine the remaining gravy with veal gravy and butter rolled in flour, then boil with the brains.

  8. Pour the mixture into a dish and mix with the sage from the pig's belly.

  9. Serve hot with apple sauce and mustard.
