To Roast Pheasants

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bird

  1. Preheat the oven to 400°F (200°C).

  2. Pick and draw the pheasant, cut a slit in the back of the neck, and remove the giblets without cutting off the head.

  3. Wipe the inside of the bird with a clean cloth.

  4. Twist the legs close to the body and leave the feet on while cutting off the toes.

  5. Truss the bird like a fowl for easier carving.

Roast

  1. Baste the pheasant with butter.

  2. Roast the pheasant for 30 minutes if young, or 40–50 minutes if full‑grown.

Make the bread crumb stuffing

  1. In a stew pan, combine the bread crumbs with enough milk to soak them.

  2. Alternatively, stew the giblets, head, neck, and legs of the poultry to moisten the bread crumbs.

  3. Add the soaked bread crumbs to the pan with the onion and pepper or allspice.

  4. Bring the mixture to a boil.

  5. Stir and let simmer until thick.

  6. Remove the onion and pepper.

  7. Stir in the cream, melted butter, or broth before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soaked in milk, they thicken the mixture into a soft, moist stuffing.
Butter
Basting fat that carries heat over the skin and adds richness and gentle browning.
Cream
Stirred in at the end to add richness and a smoother, softer texture.
Onion
Simmered in the mixture to add savoury flavour, then removed before serving.

The step that matters

Roasting time for the bird's age. Pheasant is lean and dries out quickly, so the young and full-grown birds need different times. Checking doneness before the upper end of the range helps keep the meat juicy.

Swap the mace

How well each one fits the dish's main ingredients (pheasant, butter, bread, milk, onion, pepper, cream):

  1. Garlicfits better
  2. Nutmegfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against pheasant, butter, bread, milk, onion, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
