To Roast Woodcocks

Ingredients

Directions

  1. Truss the legs of the woodcocks close to the body.

  2. Run an iron skewer through each thigh and tie them on a small spit.

  3. Roast the birds over a clear fire for 20-30 minutes.

  4. Toast or fry slices of bread until golden brown and place them in a dripping pan under the birds.

  5. Baste the birds with butter and sprinkle with flour.

  6. Transfer the toasted bread to a hot dish and place the birds on top.

  7. Pour beef gravy into the dish and serve some in a separate boat.

  8. Garnish with slices of lemon.
